Making your own ice cream takes some time, but it is one of the best ways to get good ice cream. Here is a recipe that is not too complicated, you need an ice cream maker. Check in advance how long the cooling element should be in the freezer.
Ingredients (4 persons)
- 500 ml. milk
- 350 ml. Whipped cream
- 1 vanilla pod
- 5 egg yolks
- 150 gr. sugar
Prepare
Halve the vanilla pod and remove the marrow, add the milk with the empty pods and the marrow into a pan and place over low heat.
The milk should not boil. Let it soak in for at least 30 minutes.
Add the egg yolks and sugars together and beat with a mixer for 15 minutes. The mixture now flows smoothly from the whisk.
Remove half the vanilla pods from the milk and slowly add the milk to the mixture of egg yolks and sugar while stirring. Keep stirring well so that the egg yolk mixture does not solidify.
Pour everything back into the pan and place on low heat; keep stirring so that the mixture does not stick to the bottom. The mixture must be heated to 80°C so that the egg yolks solidify.
Pour the mixture into another bowl and let it cool slightly, then add the whipped cream and let it cool completely to room temperature, then place the mixture in the refrigerator for another 1 hour.
Turn on the ice cream maker and slowly pour the mixture into the ice cream maker. My machine takes 30-45 minutes to make ice cream. When the substance has hardened, transfer the ice cream to a separate bowl and place it in the freezer for at least 3-4 hours to freeze further.
Serve the ice cream with another ingredient. For example tarte tatin.
