Tom Kha Kai is one of the most famous soups from Thailand. It is a relatively mild soup. The soup consist of chicken, galangal and coconut milk. This is a very tasty soup and if you start cooking Thai this is one of the dishes you can make first.
Ingredients (for 4 persons)
- Galangal
- 2 stalks of lime grass
- 2-3 red Thai chilis
- 5 kaffir lime leaves
- 400 gr. Coconut milk
- 2 limes
- 500 gr. Chicken thigh
- 500 gr. Chicken broth
- 1 tablespoon palm sugar
- 1 tablespoon fish sauce
- Oyster mushrooms
- Shiitake
- Coriander
- Salt
Prepare
Cook the chicken stock with a little salt and as soon as it boils add the chicken thigh cut into small pieces. Bring it back to a boil and let it simmer gently for 10 minutes.
In the meantime, cut the stalks of limegrass into large pieces and break the pieces. Cut the Thai chilis into large pieces, remove the seeds if necessary and tear the kaffir lime leaves. Cut the galangal into slices, make sure you have about 10-15 galangal rounds.
Add the coconut milk to the chicken stock and also add the ingredients mentioned above. Add the palm sugar and the fish sauce. Stir and bring to a boil. If the soup is not eaten immediately, this is the point to put the soup away and heat it up as soon as you want to serve the soup.
Cut the oyster mushrooms and shiitake into large pieces and add them to the hot soup. Stir in the soup and turn the pan off the heat.
Squeeze 2 limes and add (part of) the lime juice to the soup.
Serve the soup, sprinkle some coriander over the soup. Please note that galangal, lime grass, kaffir lime should not be eaten. Not everyone knows this. Serve the soup with a Riesling or Gewürztraminer.
