This ceviche is one of the tastiest ceviches we have ever eaten. It is not difficult to make and the dish is a feast for the eyes.
Ingredients (4 persons)
- 2 breams or 4 fillets (skinless)
- 6 limes
- 1/2 teaspoon chili paste
- 1/2 red onion
- Coriander
- 1 red chili
- 2 cloves garlic
- 2-3 cm. ginger
- 1/2 sweet potato
- Salt
Preparation
Finely chop the garlic cloves and ginger. Add the juice of the limes to the garlic and ginger and add a handful of coriander to the whole.
Let the dressing soak for 30 minutes and then pour the mixture through a very fine sieve.
Add the chili paste to the juice and possibly a little salt, mix everything and put it aside for at least 4 hours.
Peel the sweet potato, cut it into cubes and blanch the cubes. The cubes should remain al dente.
Fillet the sea bream and cut it into thin slices. If fillet is used, cut the fillet into thin slices and sprinkle a little salt over the fish. Add the fish to the lime juice and let it soak for 5 minutes.
Peel the red onion and cut it into rings. Place the red onion in ice water for 5 minutes, then drain and dry.
Finely chop coriander and cut the red pepper.
Serve
Remove the fish from the marinade and place the fish on the plate. Do not throw away the marinade.
Sprinkle the sweet potato cubes, red onion slices, coriander and red chili over the fish. Drizzle some dressing over the fish.
