Tataki is a Japanese preparation method in which the meat or fish is roasted very briefly and served almost raw. This dish is incredibly easy to make. The dish can be made in various ways with different dressings. The recipe below is one of the simplest tuna tataki recipes.
Ingredients (4 persons)
- 300 gr. tuna (sashimi quality)
- soy sauce
- white sesame seeds
- black sesame seeds
- Olive oil
- wasabi
- ginger (gari)
- wakame (seaweed)
Preparation
Pour the soy sauce on a plate and sprinkle an equal amount of black and white sesame seeds on another plate and mix the sesame.
Cut the tuna into two equal parts. Add the tuna to the soy sauce and then add it to the sesame seeds. Make sure the tuna is very fresh. Ask the fishmonger about the quality of sashimi, as the fish is eaten almost raw.
Heat a frying pan with olive oil over high heat once the two pieces of tuna are wrapped in the sesame seeds.
Fry the tuna in the oil for about 1 minute per side. The outside is slightly discolored.
When the tuna is cooked on both sides, put it in the refrigerator, covered with foil. In this way, the tuna stays cold and will not overcook. It is important that the tuna remains as raw as possible and only the outside is slightly roasted.
Serve
Remove the tuna from the refrigerator and cut it into thin slices. Divide the slices over the plates. Serve wasabi with the tuna, ginger and wakame. This is a classic / Japanese way of presenting.
Serve a wood-aged chardonnay with the dish.
I also serve homemade wasabi ice cream with the dish. The soy sauce can also be prepared in slightly different ways, for example you can add olive oil or garlic.
