At De Librije (***) we once ate unhinged apple pie, a delicious dessert in which all ingredients were loose on the plate with of course all kinds of surprise elements. In his cookbook Just Cook it, Sergio Herman has a dessert of tiramisu with green tea and I wanted to make a combination of both and made my version of it tiramisu.

The photo shows the tiramisu with an avocado cream. The avocado cream is not necessary, but it will make it softer.

Ingredients (4 persons)

Ingredients for Tiramisu
  • 12 lady fingers
  • 200 gr. mascarpone
  • 1 cup of espresso (cooled)
  • 1 vanilla stick
  • 100 gr. olive oil
  • 25 gr. Tia Maria
  • 50 gr. Amaretto
  • Matcha powder
  • Cocoa powder

Prepare tiramisu

Mix the espresso with the Tia Maria and the Amaretto and put it in the fridge.

Cut the vanilla stick in half, remove the pith from the peel and make a vanilla oil by mixing the oil with the pith and vanilla stick. Put this away for at least 2 hours. The longer it is stored, the more intense the taste.

Beat the mascarpone with 3 tablespoons of vanilla oil and 5 tablespoons of coffee / Tia Maria / Amaretto. Put this away until you want to use it. Add sugar if necessary, but this is not necessary for me.

Serve

Break the lady fingers in 3. Stir the mascarpone until smooth. Sprinkle some lady fingers on a plate and spoon some mascarpone over the lady fingers, repeat this so that everything is mixed up. If you serve avocado cream with it, also spoon it through / over the mascarpone – lady fingers mixture. When all lady fingers have been used (3 per person) and the mascarpone has been divided, finish it off with sifted matcha and sifted cocoa powder. Serve chocolate pieces with this if necessary.
