Passion fruit coulis is delicious with lemon tartelettes, but also over panna cotta or as a garnish for dessert. It is very easy and quick to make.
Ingredients (6 persons)
- 4 passion fruits
- 75 gr. Sugar
- 1 lime
Cut open the passion fruit and remove the pulp from the fruit.
If a coulis without seeds is desired put the flesh in a fine sieve. Place the sieve on a bowl and squeeze the juice out of the flesh with a spoon. If a coulis with seeds are desired, this step does not have to be done. Usually I sieve 3 passion fruit and I use the seeds from 1 passion fruit.
Put the passion fruit (juice and pulp), lime juice and sugar in a saucepan and bring to the boil. Cook for about 2-3 minutes until everything thickens. Remove from heat and let cool.
Serve with dessert.
