Panna Cotta is an Italian dessert. You can make Panna Cotta in various flavors and colors. I make the base Panna Cotta regularly and also Panna Cotta with fruit, but a matcha Panna Cotta I had never made, let alone eaten. Wanted to try this and I liked it. Unfortunately, some matcha has sunk to the bottom, if anyone has a tip on how the matcha is not dropping to the bottom, I’d like to hear that.

Matcha is a green tea. Matcha is slightly bitter in taste, while Panna Cotta is generally a bit sweeter, the combination works well. Please note that Panna Cotta should be in the fridge for at least 4 hours to stiffen.

Ingredients (for 3 people)

  • 250 g. whipped cream
  • 50 g. milk
  • 3.25 gelantin
  • vanilla pod or 1/2 bag vanilla sugar
  • 50 g. granulated sugar
  • 1.5 tablespoon matcha powder


Soak the gelatin in cold water for about 10 minutes.

Bring the milk to the boil and then remove the pan from the heat, the milk should not cook. I use whole milk to make the dessert a bit creamier, you can also use skimmed milk. Add the soaked and squeezed gelantine to the warm milk and beat it very well. The gelatin must be completely mixed with the warm milk.

Put the pan away. If you use a vanilla pod, cut the stick in half and remove the vanilla marrow. Pour the whipped cream into a pan, add the sugar and vanilla and bring to the boil over low heat. Stir regularly.

In the meantime, add the matcha to the milk with gelatin. Stir well so that there are no lumps of matcha in the milk.

When the whipped cream cooks, remove the pan from the heat and stir the matcha milk into the hot whipped cream, stir well, make sure everything is well mixed.

Pour the mixed substance into small bowls from which you want to serve the Panna Cotta. When serving, I want to take the Panna Cotta out of the bowl, which makes me smear the bowl with olive oil, so the Panna Cotta is easier to release from the bowl.

Put the bowls in the fridge for at least 4 hours. The Panna Cotta will stiffen now.


Remove the panna Cotta bowls from the fridge and remove the Panna Cotta from the bowls. If necessary, use a knife.

Matcha Panna Cotta with raspberries

You can serve fresh fruit or a cracker of sesame. The Panna Cotta can also be sprinkled with sesame seeds. I had served fresh raspberries at the matcha Panna Cotta.
