Licorice is a typical Dutch sweet. Licorice is made from liquorice. There are various liquorice flavors such as sweet liquorice, salt liquorice and bay leaf liquorice. This liquorice sauce goes very well with duck breast fillet and Beef Wellington.

Ingredients (4 persons)

Ingredients licorice sauce
  • 100 gr. licorice (preferably sweet/salt)
  • 200 gr. water
  • 1 cinnamon stick
  • 2 star anise
  • 1 tps. apple syrup
  • dash of balsamic aceto

Prepare

Combine the licorice and water in a saucepan and put it on very low heat. Stir regularly so that the licorice does not stick to the bottom of the pan and so that the licorice does not become one big lump. When some of the licorice has melted add the cinnamon stick and star anise.

Preparing licorice sauce

Let the licorice melt. This will take about 30 minutes. Keep stirring regularly.

When the licorice has melted, strain the sauce through a very fine sieve. Return the sieved sauce to the pan and add the balsamic aceto and apple syrup. Bring everything to the boil and let it reduce completely.

When the sauce is the desired consistency, turn off the heat and set aside until use. Do not put this in the refrigerator.

Heat the sauce just before serving and serve with the dish or on its own.
